Peach Pepper Prawn Packages

I had a little fun with these... a few months ago I was working in a kitchen where we were developing various relishes, compotes etc. One of the products we were working on was a peach red pepper relish which I thought could have been SO much better, so this is my own version of it. I used fresh Ontario peaches, hot red peppers, lots of fresh ginger and some honey... along with some salt and pepper. It's on top of some shrimp that I sauteed with butter and garlic and then tossed in fresh lime juice and green onion slices. Everything went into some tortilla chip bowls for easy snacking... delicious!
